chicken and peaches recipe

This chicken and peaches recipe is going to be one that you will add to your summer weekly menu, I promise! It’s so sweet, yet tangy and full of flavor! Plus you cook it all in one pan which is a win for me. Summertime is not for doing dishes, amen?

And for you parents of littles, this was even a winner with my toddler who has decided to basically not eat anything these days. So really, if he likes it… I really think you and your family will too!

This recipe would probably be best with fresh peaches but let’s be honest, I am a mom of two under two. So I stuck with canned peaches. But honestly I liked how it turned out. I think canned peaches can be even juicier!

  • 1 ½ lb chicken thighs boneless skinless
  • ½ teaspoon chili powder
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 2 tablespoons olive oil

  • 2 yellow peaches, sliced, OR one can of sliced peaches, drained
  • 3 tablespoons of honey
  • ½ lemon freshly squeezed
  • 2 tablespoons butter

Cooking the chicken

  • Season chicken thighs with chili powder, italian seasoning, salt, and pepper.
  • Heat the cast-iron skillet over medium heat for approximately 2 minutes.
  • Add 2 tablespoons of olive oil. Then add chicken thighs. Cook the chicken on medium heat for 5 minutes, without moving it so it sears.
  • Flip the chicken thighs over, reduce heat to low-medium, and cook for about 5 more minutes or longer until it’s cooked through. Remove from heat.
  • Remove chicken from skillet.

Cooking the peaches

  • In the same skillet, on medium heat, add peaches and slightly cook them, without overcooking, – about 5 minutes.
  • At the very end, add honey, lemon juice, and butter. Stir

Final Touches

  • Add back the cooked chicken nestled in between the peaches. Reheat briefly. Remove from heat.
  • Top with fresh thyme.
  • Enjoy!
